Adjust oven racks to top and middle positions and preheat oven to 425°F. Wash and dry all produce.

Toss fingerling potatoes on a #baking sheet{} with a large drizzle of cooking oil, chopped rosemary, half the fry seasoning, salt, and black pepper.

Meanwhile, pat sirloin steak dry with paper towels and season all over with remaining fry seasoning, salt, and black pepper.

Melt butter in a #medium pot{} over medium-high heat. Add half the shallot, a pinch of salt, and black pepper. Cook, stirring constantly, until softened ~{45%seconds}.

Thinly slice sirloin steak against the grain.
